Caseinates

Caseinates are casein compounds with metals like sodium and calcium. Caseinates are produced by adding an alkali to another derivative of casein, acid casein. Used as a protein supplement and to alter the texture and stability of various products, such as baked goods, cheeses, ice cream, medications, and soap.

They are primarily used in meal preparation and breaking down of fats. Calcium caseinate contains about 17% glutamic acid which provides different health benefits such as treating low blood sugar, improving memory and focus, boosting the immune system and treating intellectual disorders, while Sodium caseinate acts as a greater food additive for stabilizing processed foods.

They improve the structure configuration of foods, act as fat emulsifier and stabilizer, and enhance foaming and foam stability.
