Bromelain

Bromelain is a protease enzyme derived from stems of pineapple. Bromelain extract is a mixture of proteolytic enzymes which gives maximum cumulative activity over the time for the temperature range 350-450 C.

Bromelain is one of the most popular proteases to use for meat tenderizing. It is solid in powder form and its activity measured mostly in GDU units

Bromelain is used as a clarifying agent and natural flavour enhancer in the production of beer. It also has applications in various industries due to its fabric processing, anti-inflammatory and pain-relieving, skin-smoothing, and more properties.
